Bhavana's Methi Malai Mattar

Methi Malai Mattar (Fenugreek leaves in creamy sauce)

* 1 tbsp Oil
* 1 tsp Sugar
* 2 tbsp Cream
* 25 gm Onions
* 1 tsp Ginger_garlic paste
* ¼ tsp Turmeric powder
* 1tsp kasoori methi
* 50 gm Fresh Green Peas
* 2 tsps paparika
* Salt according to taste
* 2 tbsp cashew nut paste
* 800 gm Fenugreek leaves, finely chopped
* 2 cloves
* 1 cardamom

Method:

1. Heat oil, toast cloves and cardamom pod.
2. Add onions and cook till golden.
3. Add turmeric powder and roast till the raw smell goes away.
4. Add ginger-garlic paste and fry for a couple of mins
5. Add the chopped fenugreek leaves and saute for about 5 mins
6. Add the paprika (or cayanne pepper) and fry for a couple of more mins.
7. Add the peas and salt. Fry for 2 minutes.
8. Add Cashewnut Paste and fry for 2 minutes.
9. Add cream and cook till the desired consistency of the curry is reached.

Tip: Can add fried Paneer too. Its an excellent addition.
